Krisnadi di Desa Ngawenombo, Kecamatan Kunduran, Kabupaten Blora, Jawa Tengah.
Di sana pemilik perusahaan perdagangan asal Kanada itu turut memanen kelor di kebun.
Ia juga mengamati tahap demi tahap
pengolahan kelor di Pusat Pembelajaran Moringa Organik Indonesia milik Dudi.
Menurut David, ia memilih bekerjasama dengan Dudi karena
serbuk kelor yang dihasilkannya
berkualitas lebih baik dibandingkan produk dari
negara-negara sentra produksi kelor lain di dunia. Salah satunya
dalam hal kandungan nutrisi.
"Salah satu buyer dari Jerman menguji kandungan nutrisi kelor produksi Dudi dan ternyata
kandungan nutrisi kelor produksi Dudi
paling baik," ujar David.
Menurut Dudi kandungan nutrisi adalah aspek paling penting
yang menjadi indikator kualitas kelor.
Pasalnya, lembaga internasional seperti
Food and Agricultural Organization (FAO) dan World Health Organization (WHO)
menggadang-gadang moringa---sebutan kelor di dunia internasional---sebagai
super food karena kandungan nutrisi kelor yang luar biasa.
Menurut Dudi kandungan
potasium atau kalium serbuk kelor 15 kali lebih tinggi daripada
pisang. Kalium salah satu unsur penting
untuk membantu menjaga kesehatan
jantung.
Keunggulan lain
kandungan vitamin A sebuk kelor 10 kali lebih
tinggi daripada wortel, kandungan zat besi 25 kali lebih tinggi
daripada bayam, vitamin C kali dari
jeruk, kalsium 17 kali lebih tinggi
daripada kalsium susu, dan protein 9 kali lebih tinggi daripada yoghurt.
Lantaran kandungan nutrisinya yang tinggi, beberapa
negara memanfaatkan kelor untuk

David menuturkan moringa juga menjadi salah satu sumber
nutrisi masyarakat di Eropa yang peduli
hidup sehat. "Masyarakat di sana
mengolah serbuk moringa menjadi salah satu bahan smoothie,"
tambah David.
Dudi mengolah daun kelor dengan prosedur ketat untuk
menjaga kandungan nutrisinya.
"Hasil panen harus segera diolah maksimal 4 jam setelah panen," ujar Dudi. Setelah merorot
daun hasil panen, para karyawan bergegas
mencuci dan mengeringkan daun kelor.
Proses pengeringan
berlangsung dalam ruangan. Dudi mengatur suhu di ruang pengeringan maksimal 35oC dan kelembapan 46%
agar tidak merusak kandungan nutrisi. Daun kelor kering setelah 3 hari
pengeringan.
Selanjutnya Dudi menggiling daun kering menjadi serbuk
hingga tingkat kehalusan 200 mesh. Daun
kelor serbuk itu menjadi bahan baku teh daun
kelor celup.
Pria 55 tahun itu juga mengolah daun kelor menjadi
tepung yang lebih halus, yakni hingga
berukuran 500 mesh.
"Tepung daun kelor
seukuran debu itu dapat digunakan sebagai bahan campuran produk
apapun baik itu makanan, kapsul, atau
kosmetik," ujar Dudi.
Untuk menghasilkan
tepung sehalus itu caranya dengan mengisap "debu" saat proses
penepungan daun kelor kering.
Dudi menjual sebagian besar produk tepung dan olahan kelor
ke mancanegara, seperti Malaysia,
Singapura, Vietnam, Myanmar, Korea
Selatan, dan negara-negara lain di Benua Afrika, Eropa, serta Amerika.
"Pasar Indonesia malah sedikit karena di masyarakat
kita beredar mitos kalau kelor
berhubungan dunia mistis," ujar alumnus Fakultas Pertanian Universitas Siliwangi, Tasikmalaya, Jawa
Barat, itu.
Untuk pasar lokal,
Dudi memasarkan aneka produk olahan kelor melalui 71 gerai yang
tersebar di seluruh Indonesia.
Dalam sebulan Dudi mampu menjual rata-rata 2 ton tepung daun
kelor dengan harga Rp250.000 per kg atau
total omzet rata-rata Rp500 juta per
bulan. Tepung daun kelor itu menjadi bahan baku berbagai olahan,
seperti teh, aneka jenis makanan, kapsul
herbal, dan aneka produk kosmetik.
Dudi memperoleh pasokan bahan baku kelor dari pekebun mitra,
salah satunya Felix Bram Samora. Pemuda
asal Blora itu mengebunkan kelor secara
organik di lahan 3 hektar sejak 2014.

bersebelahan dengan area pengolahan
kelor milik Dudi.
"Idealnya lokasi kebun dekat dengan lokasi pengolahan karena hasil panen
daun kelor harus segera diolah sebelum 4
jam," tutur Dudi.
Dari kebun seluas itu Bram memanen rata-rata 500 kg daun
kelor segar setiap dua hari. Hasil panen
itu ia jual ke Dudi, lalu dikeringkan.
Dari jumlah hasil
panen itu menghasilkan 50 kg daun kelor kering atau rendemen 10%. "Setiap bulan saya harus
membayar ke Bram rata-rata Rp75 juta per
bulan," ujar Dudi sambil tersenyum.
